This was a random recipe that I made out of the blue.

It was unplanned.  I just opened the cupboards, the pantry, the refrigerator, and saw what I could make for lunch. We all do this every time. For you late-night munchers…Just stop it! And you wonder why you’re not losing weight and post it on your Facebook status and complain about it. Shaking My Head

I grabbed my red lentils that I bought from Trader Joe’s and half of a bag of frozen grains medley that I got from Wholefoods.  Then there they were.  Those pickled Jalapenos!  They were my son’s leftover condiments that he grabbed from a local mexican food stand.  The jalapenos were the perfect addition to add a little kick of flavor in your mouth.  On hand, you guys already know I always have fresh garlic and onions because they are my go-to sources of flavoring with all my foods. Plus, they make the kitchen smell good when it’s sauteeing in the pan. All of these ingredients are good sources of protein, fiber, and lowers cholesterol and high blood pressure. Well as for me, it’s healthier since I’m trying to maintain my sodium levels.

As some of you are my followers coming from my Instagram and don’t like reading. Yup! you know who you are and I know who you all are too.  Anyway, you probably have seen this on my Instastory and were curious how I made this.  My dietary needs are different than yours so remember to adjust the seasonings to your liking! So, here you go!

Jalapeno Lentils and Grains Bowl

  • 1 Cup Red Lentils (Trader Joes)
  • 1 Cup Frozen Grains Medley (Engine 2 Plant Strong)
  • 1 Cube Veggie Broth
  • 2 Cups Water for the lentils
  • 2 Tablespoons Pickled Jalapenos
  • 2 Garlic Cloves minced
  • 1/4 Yellow Onions
  • 2 Tablespoon EVOO
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Cumin
  • 1/2 Teaspoon Paprika
  • 1/2 Teaspoon Garam Masala
  • 1/2 Teaspoon Curry Powder
  • 2 dashes of Pepper
  • Salt (optional)
  • 1 Cup of Rice or Brown Rice
  • Limes for garnish
  • Step 1 Heat your pan with the oil
  • Step 2 Add onions and saute til translucent then add the garlic til fragrant
  • Step 3 Add the water and veg cube to the pan. Make sure you crumble the cube. Turn up the heat to medium high for a little boil.
  • Step 4 Drop your lentils in. I added the jalapenos in so it can flavor the lentils and add all the seasonings.
  • Step 5 Reduce heat and simmer 12-15 mins or until lentils soften.
  • Step 6 Next add the frozen grains medley and mix it in with the lentils. Cover for an additional 5-7mins.
  • Step 7 In a small bowl, add your rice on one side and add your jalapeno quinoa lentil mix on the other.
  • Step 8 Add limes to garnish. Then serve!
  • Step 9 Note: Please adjust the seasonings more or less to your liking!
