When Tacos Fall Cause They Can’t Hold It Together Like Drunk Individuals

Now don’t get all disappointed cause I said Banana Ketchup MEAT(LESS) Tacos. You can use any lean ground meat. Duh! Make sure you drain the fatty oils when you heat the meat. But if you would like, keep the oil and boost up your cholesterol levels.  You all are grown folks to make the best decisions for your own health.

Why did I use Banana Ketchup?

Because I didn’t have tomato sauce in my pantry. Plus, every Filipino household has a bottle of Banana Ketchup to use as their condiment. Besides, I thought it would compliment the meatless meat and add the reddish color too. A few taco meat filling recipes calls for adding brown sugar but with Banana Ketchup, it’s already sweetened because of its bananas in the ingredients.

I did experiment on my first trial and the results were good!  You get a little bit of sweetness and a tad bit of the tangy taste. The meatless meat that I chose does include sodium so I did not add salt. I try to avoid the use of salt due to my prehypertension (or high blood pressure) health issues. To get that tangy kick taste, I added a few capfuls of apple cider vinegar.

These past couple of weeks

have been a little tough and stressful for myself as my aunt was hospitalized with a minor stroke 2 weeks ago. My son, my mother, my cousin with her family, and my aunt’s besties have been going to the hospital to visit her almost everyday. “Our PRESENCE has been greater than one’s excuse for not seeing her.” That straight up came from my mouth! There are no excuses to not see her and shouldn’t be an inconvenience with certain individuals schedules.  Lately, I’ve been making quick meals like these to feed my family cause we have been always on the go! I come home to feed my pup Daja, then go back to the hospital because I know my aunt needs us there.
